White Sauces


MEDIUM White Sauce

It took me years to figure this out: "White Sauce" is the stuff our mother taught us to prepare while making chipped beef, creamed codfish, or chicken a la king!



2 cups milk
4 tbsp. fat
4 tbsp.flour
1/2 tsp. salt
dash pepper


Melt the fat in the top of a double boiler and add flour, salt and pepper. Blend thoroughly. Pour in the cold milk and stir constantly until thick. Makes 2 cups.

THIN White Sauce: Use only 2 tbsp. each fat & flour

THICK white sauce: Use 8 tbsp. each of fat & flour in above recipe.
