Seasoning and Chicken


Serves four

(2) recipes. This really looks intriguing



Ingredients: - Soul Food Seasoning

2 tablespoons ground red pepper flakes
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons dark chili powder
1 tablespoon paprika
1 teaspoon thyme powder
1 teaspoon freshly ground black pepper

Ingredients: - Smothered Chicken

Nonstick cooking spray
3 tablespoons flour
1/2 cup chopped onion
1 tablespoon chopped fresh garlic
1/2 teaspoon celery seeds
1 tablespoon soul food seasoning (see below)
1 teaspoon freshly ground black pepper
1 1/2 pounds skinless, boneless chicken breasts


Soul Food Seasoning:

Mix ingredients together and store in a sealed container. This spicy seasoning can be used on just about anything. Recipe makes about 3/4 cup.

Smothered Chicken:

Mix flour with 4 tablespoons of water to make a thin sauce. In a nonstick skillet coated with cooking spray, heat flour mixture over medium-low heat, stirring continuously for 10 minutes or until a smooth sauce is formed (add more water if necessary). Stir in remaining ingredients and two cups of water. Add chicken. Cover and simmer for about 45 minutes, or until chicken is cooked through. Serves four.
