Pumpkin Cheesecake

 

Makes 8 to 10 servings

 

Ingredients:

CRUST:

1-1/2 cups graham cracker crumbs
2 tbsp. sugar
1/4 cup butter

FILLING:

8 oz. cream cheese
3/4 cup sugar
3 eggs
2 tbsp. flour
1 tsp. cinnamon
1/2 tsp. pumpkin pie spice
16-oz can pumpkin
1/2 tsp. vanilla

TOPPING:

1-1/2 cups sour creme
2 tbsp. sugar
1/2 tsp. vanilla

 

Combine crust ingredients, crumbling into a meal. Press together into a 9-inch springform pan.

Preheat oven to 350 degrees. Beat together the cream cheese, sugar and eggs. When smooth, stir in the flour, spices, pumpkin and vanilla. Pour filling over the crust. Bake about 50 minutes, or until set.

Whisk together the topping ingredients and spread over the hot cheesecake. Cool, then refrigerate overnight.

Makes 8 to 10 servings.
