Holiday Oatmeal Cookies


Makes 100 2-inch cookies


2 cups butter
2 cups brown sugar
2 cups sugar
2 teaspoons vanilla
4 eggs-medium size
3 cups all-purpose unbleached flour
2 teaspoons salt
2 teaspoons Baking Soda
6 cups uncooked rolled oats
1 12 oz package butterscotch chips
1 1/2 cups chopped pecans
3/4 cup grated coconut


Cream butter and sugars until fluffy. Stir in vanilla. Add eggs one at a time, beating after each addition.
In a separate bowl mix salt, flour, and Baking Soda, then add to creamed mixture. Add remaining ingredients and mix well. Line cookie sheet with aluminum foil. Drop cookie dough onto ungreased foil by tablespoonfuls, about 1 inch apart. Bake in 350 degree oven about 9 1/2 minutes. Do not overbake.

Makes 100 2-inch cookies. These freeze well.
