Drop Sugar Cookies


Makes about 5 1/2 dozen, 2-inch cookies.

An excellent "make today, bake tomorrow" recipe. Keep in the freezer and warm in the microwave when the urge for cookies hits.



2 1/2 cups sifted all-purpose flour
1/4 teaspoon salt
1/2 teaspoon Baking Soda
3/4 cup butter flavored shortening
1 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1/4 cup egg substitute or 1 egg
2 teaspoons skim milk


Sift together flour, salt and Baking Soda. Using an electric mixer, cream butter flavored shortening in large bowl; gradually add sugar and continue beating until light and fluffy.
Beat in vanilla and egg. Add flour mixture and beat until smooth; blend in milk. Drop by teaspoonfuls about 3 inches apart on greased baking sheets.

Flatten with bottom of glass that has been dipped in sugar. Bake in 400 degree oven about 12 minutes, or until edges are lightly browned. Cool on racks. Makes about 5 1/2 dozen, 2-inch cookies.
