Chocolate Éclair

 

Makes 1 éclair the size of a long baking dish ...

 

Ingredients:

Eclair:

1 BOX OF GRAHAM CRACKERS
1 LARGE BOX INSTANT VANILLA PUDDING
LARGE BOWL OF COOL WHIP

Topping:

1 SMALL CAN PET MILK
1 CUP SUGAR
3 TBLS. COCOA
1 STICK MARGARINE
1 TSP. VANILLA FLAVORING

 

Line a long baking dish with graham crackers. Mix pudding with 2 cups of milk, beat with whisk, then fold in cool whip. Make layer after layer of graham crackers and pudding mixture. I use a whole box of graham crackers and end with those on top.
Topping

Put first 3 ingredients in sauce pan and cook on medium heat until it comes to a boil, stirring often. When it boils take off heat and add the butter and vanilla and beat it. Pour over graham cracker and pudding layers.

Good hot or cold.
