"Try These"


Old-Fashioned Chili & Cheese


Serves 8.



2 garlic cloves
1 medium onion, chopped
2 tbsp. vegetable oil
1 lb lean ground beef
28 oz. can tomatoes
2 1/2 cups water
2 tomatoes, peeled, seeded & chopped
1 green pepper, chopped
2 tbsp. chili powder
1 tbsp. paprika
1 tsp. rubbed thyme
1/2 tsp. dried oregano
1/2 tsp. dried basil
1/2 tsp. cayenne pepper
1 tsp, salt
14 oz. can kidney beans, rinsed
1/2 cup grated old Cheddar cheese
1/2 cup grated Swiss cheese


Saute garlic and onion in oil until tender. Stir in ground beef and continue cooking until no pink remains; drain.
Stir in canned tomatoes, water, fresh tomatoes, green pepper, seasonings and kidney beans. Bring to a boil; reduce heat and simmer 2 1/2 to 3 hours.

At serving time, spoon chili into individual bowls and sprinkle with cheese. Serve with garlic bread.
